I love kangaroo meat. It's just fabulous. It tastes great in Thai curries, works amazingly as a steak with beetroot and would probably work in every other situation where you use beef.
Kangaroo has other advantages over just tasting good. Kangaroos, being mammals with as single stomach, are much more efficient at turning plants into meat. So less land needs to be devoted to their rearing. In fact since they run wild, no land need be devoted anyway.
Australia's grasses react very poorly to cows and other grazers with cloven hooves. These animals rip grasses out at the roots, while native animals nibble on them. Their hooves also trample soil, reducing vegetation, causing compaction and accelerating soil erosion. Kangaroos have paws and cause far less trauma to our delicate soils.
So get out there and eat Skippy! Yum!
In Australia you can get Skippy from good supermarkets and butchers. Most butchers should be able to order it in for you. If you have no luck, try Aussie Game Meats.
In the US, try MacFarlane Farms. I can't vouch for them but apparently they have roo. In Europe you might try Deli Ostrich if you trust Belgians with food.
Cooking kangaroo is easy. Be sure not to cook it past medium or it'll end up stringy and awful. My favourite recipe is Seared Kangaroo with baby beetroot and parsnip crisps. Yum and quite easy.
